These caprese skewers are anything but boring! I mean, isn’t that caprese flavor combination one in all the best? Here you get all those flavors, plus the bonus of serving them skewer-style, which always makes food better.

They Are studded with juicy chicken, pieces, grape tomatoes and fresh mozzarella. They're flavored with an easy homemade pesto and balsamic glaze.

You can find balsamic glaze at the foodstuff next to the opposite bottled vinegars, but if you’d rather make it yourself it’s easy to do! All you would like could be a little honey and balsamic vinegar (I’ve listed my exact recipe near the tip of this post).

Ingredients
  • 1 3/4 lbs boneless skinless chicken breasts
  • 1 lb. grape tomatoes
  • 1 Tbsp oil
  • 1 (8 oz) package mozzarella balls, drained
  • Salt and freshly ground black pepper
  • 3 Tbsp store-bought or homemade balsamic glaze
Homemade Pesto
  • 2 cups (40g) slightly packed fresh basil leaves
  • 3 Tbsp finely shredded parmesan cheese
  • 2 Tbsp pine nuts or chopped walnuts
  • 1 large garlic, minced (1 1/2 tsp)
  • 1/3 cup oil (regular or extra virgin)
Instructions
  1. If using wooden skewers soak in water a minimum of 1 hour (I prefer to soak overnight. I used 11 8-inch skewers).
  2. Preheat a grill over medium-high heat to about 400 degre.
  3. Thread chicken and tomatoes onto skewers as pictured  4 pieces of chicken and three tomatoes per skewer.
  4. Brush each side with 1 Tbsp oil and season each side with salt and pepperGrill chicken kebabs about 5 - 6 minutes per side until chicken registers 165 in center.
  5. Meanwhile prepare pesto, in an exceedingly kitchen appliance pulse basil, parmesan, pine nuts and garlic several times until minced.
  6. Season with salt and pepper to taste and with kitchen appliance running slowly pour in oil.
  7. Once kababs have cooked through remove from grill and thread one mozarella ball onto each end of the skewer, spoon pesto over kebab and drizle with balsamic. Serve warm.
